GLUTEN FREE PEANUT BUTTER CHOCOLATE CHIP COOKIES
Makes 12 cookies Ingredients:
1 cup peanut butter
¾ tsp aluminum free baking soda
¾ cup dairy free mini semisweet chocolate chips (I like Enjoy Life) (reserve extra ¼ cup chocolate chips for topping)
½ cup coconut sugar pinch of sea salt for finishing
1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
2. Whisk together the egg, sugar, baking soda.
3. Stir in the peanut butter until smooth. Fold in the chocolate chips.
4. Drop by spoonful onto parchment paper about 2 inches apart. Press down with a fork. Bake in the oven for 10-12 minutes. Once removed from the oven, top with extra chocolate chips and sprinkle with sea salt.
Since these do not have any flour to bind, let cool on baking sheet for 20 minutes before transferring to plate or container to store. Enjoy.
